You choose the menu skin using the skin gallery window which is accessible by clicking Choose skin... button on the Appearance tab. Skins generally come in two types:

HTML
Skins that use plain HTML and CSS code, thus being lightweight, highly customizable and flexible.

Bitmapped
Skins that use bitmaps as backgrounds for the menu bar and pop-ups, thus being graphically way richer than HTML skins.
