In order to do this, go to the result formatting window (this is accessible from the Search Engine menu -> Result Formatting or from the toolbar). Now, double click the 'Documents content preview' or 'Document description' item found in the right-hand side list (used items). This will open the options window where you can set the max. description size (in case of description) or number of blocks displayed and number of words in each block (in case of content preview).
Please note that if you change the description size, you will need to re-index all documents and re-generate the output files in order for the changes to take effect. In case of content preview, you only need to re-generate the output files -- there's no need to re-index the documents.
